Yields about 2.5 cups
Ingredients
-chickpeas, 1.5 cup*
-cumin, 2 tsp*
-paprika, 1 tsp
-garlic, 4 cloves*
-salt, 1 tsp*
-tahini, 2 Tbs*
-olive oil, 0.5 cup*
-lemon, 1 Tbs juice*
-parsley 0.5 cup*, or other herbs
-red pepper flakes, 0.5 tsp, optional
-water, to taste*
Equipment needed
-pot, if using dry chickpeas
-strainer
-knife
-cutting board
-food processor
-spatula or spoon
Directions
1. If using dry chickpeas (beans) make sure to soak chickpeas overnight. Strain chickpeas then set aside.
Bring 6 or more cups of water to a boil, add beans, reduce to a medium simmer. Cook for 40 minutes or until beans are soft. Strain and then rest for about 5 minutes.
2. Add the following ingredients into the food processor: chickpeas, cumin, paprika, garlic, salt, tahini, olive oil, lemon parsley, optional red pepper flakes, and then pulse with food processor until hummus becomes a smooth consistency. If hummus is too thick and hard to mix then add water gradually, about 1/4 cup at a time and continue to pulse until it's a consistency to your liking.
3. Taste hummus and add more seasonings like additional salt, cumin, paprika, and lemon juice. This is the part where you will taste and add seasoning to meet your flavor preferences. Enjoy and dip your veggies into the hummus for a tasty and filling snack.
Notes*
1. If you get dry chickpeas then 1 cup of dry chickpeas becomes about 2 cups when cooked. It is totally okay just to use all 2 cups as you'll have more hummus.
If you get canned chickpeas make sure they do NOT have salt and sugar added to it. Make sure to rinse the chickpeas and remove the liquid from the can. One 15 oz. can of chickpeas is roughly 1.5 cups. Chickpeas are also called garbanzo beans.
2. The asterisks starting from the cumin all the way to water all mean the same thing:
You will first use the exact measurement amounts. But when you are in the last step of directions, step 3, you will essentially be seasoning to taste. Through experience, I follow the exact measurements but at the very end, I'll add extra spices, herbs, and water to satisfy my flavor and consistency preferences. There is no wrong way to make hummus. Start with the required measurements then add seasonings at the very end.
3. The recipe list requires 0.5 cups of parsley. You can add an additional 0.25 to 1 cup of any herb. Green herbs you can add are such things as green onions (scallion), basil, thyme, oregano, or any other green herb you like. You can't go wrong with adding flavorful herbs to the food processor into your hummus. Add a little at a time then continue to taste as you go.
4. One lemon yields about 1.5 to 2 Tbs of juice when squeezed.
5. Some people don't know that tahini is simply ground sesame seeds.
